Use of Rice Flour for Industrial Dried Fruit Production  

While producing industrial dried fruit products for food industry, we are both cutting and pasting the products that we buy from local producers, as diced, sliced, dragee shaped. 

Beside our raw material dried fruit products like dried figs, dried apricots, sun dried apricots, dates…, we also use rice flour for our production process. 

We are making use of rice flour, which is also useful especially for dried figs, as a conservative, for the cutting process of our dried fruits. 

Rice flour is both preferred for preventing mold and yeast due to high moisture in products and for being a gluten-free by-product for dicing and slicing processes of dried fruits. 

In the first years of our company’s establishment, we were buying rice flour, just like dried fruits, from local producers.  

But since 2011, we started to produce our own rice flour, for our dried fruit production, by just buying the rice from local producers.  

Thus we could increase the quality of our dried fruit products more, by gaining full control of parameters, like pathogen and microbial rate, in rice flour. 

We can process diced or sliced products in different sizes, with our patented dried fruit cutting machines.  

While the size of our products can vary from 3-5 mm minimum to 10-12 mm maximum, the amount of rice flour, used for process increases, as the processed product surface decreases. 

This means, the highest consumption rate of rice flour is in 4x4 mm sized diced cut products, while the lowest consumption rate is in 12x12 mm sized products.

The consumption rates that we share below represents only the amounts of rice flour, that we use in the process, not the amounts that the final products contain.)  

  • 16% Rice Flour is used for producing 4x4 mm Diced Dried Figs   
  • 14% Rice Flour is used for producing 5x5 mm Diced Dried Figs   
  • 10% Rice Flour is used for producing 8x8 mm Diced Dried Figs   
  • 8% Rice Flour is used for producing 10x10 mm Diced Dried Figs
